10:38 am - Judgmental once again It’s official. I will be judging cheese again at the American Cheese Society competition in Austin, Texas in early August. I’ve always wanted to go to Texas in August… ha. I’m guessing I will spend a lot of time in the air-conditioned hotel.
Regular readers of this journal will remember that I judged cheese at the 2007 ACS competition too. Tasting and grading 50-75 cheeses a day plus all the individual category winners. Whoo-hoo! Cheese judging is probably the only time I ever feel like I have my fill of cheese. It’s also what gave me this great icon. Current Music: LKJ

What's your strategy for palate maintenance when you're tasting so many different cheeses?
excellent question.
I actually like milky tea in the morning. Juice is awful for tasting and water is just ok. Grapes and melons are good too. Mostly though it's crackers or bread. and, of course, I never taste anything on crackers or bread, just use those as a palate-cleansing chaser.
The order of tasting is important too. There's always a flavored cheese category so making sure the habeneros and jalapenos are last is an obvious think to do. Though sometimes you get tricked!
and I don't eat much else. I usually have a cobb salad after a day of cheese tasting. Hold the blue cheese!
cannot wait to see what rises to the top after all of those cheeses i always wanna run out and get the ones that stand out after all of those many many cheese tastings

the cheese conference is always miserably hot. Even in Portland it coincided with 5 straight 100 degree days. In Portland!!!
is the place where you do the judging not air conditioned??? wouldn't the extreme heat change the cheeses?
No, I expect to be fully air-conditioned. and not leave the hotel much!

I would love to do that. But I think it'll wait for a day or two after the judging. The human body can only take so much.
